Caprese Salad

To be honest, I never heard of "Caprese Salad" until recently. I just always called this dish a tomato-mozzarella-basil salad.

Anyway, it's delicious and easy to make, and a great part of a summer meal.

Fresh basil leaves are usually available at your local supermarket, but you may want to try growing your own.

We've had success growing basil plants in a back yard and even on our apartment balcony. Just be sure they get lots of sun.

There's nothing better than harvesting your own fresh basil leaves, just before prepping this dish.

Prep Time:
- 10-15 minutes

Ingredients:
- Tomatoes
- Mozzarella
- Fresh basil
- Salt
- Pepper
- Olive oil

Instructions:
- Cut tomatoes into thin slices
- Cut mozzarella into thin slices
- Layer the tomato, mozzarella, and basil leaf ingredients on a plate.
- Sprinkle salt and pepper over everything (rather a lot)
- Put in fridge and let sit for a while
- Just before serving, drizzle on a generous amount of olive oil

We usually serve the Caprese salad with sliced baguette, which is great for dipping in the tasty olive oil already mixed with salt and pepper on the plate.

Another side dish that goes hand-in-hand with a Caprese salad and sliced baguette is thin slices of smoked salmon and cream cheese - available almost anywhere.
